With me going away in September i am trying to be really healthy, I still enjoy the odd takeaway occasionally but my general rule is to eat healthy in the week and have a treat at the weekends.  I hate diets so i find i can eat loads of fruit, salads and veggies and not feel hungry. 

I had a few bits and bobs lying around in the fridge so i thought i would use them up to create a kind of healthy pizza. It was so so tasty. My friend (Laura) also had dinner with me and she also thought it was super tasty. 

Ingredients : 

1 x pack of tortilla wraps

Tomato puree 




Chilli (Optional)

Cream Cheese (Optional)


Salt & Pepper 

Menthod : 

Pre heat oven to 180 Degrees C.

1. Place your tortilla wrap on a pizza oven tray and add the puree as a base. 

2. Slice courgette and mushrooms into thin slices and add to a sauce pan with a little olive oil and garlic clove – cook until courgette has softened. 

3. Add blobs of pesto to the tortilla 

4. Scatter the courgette & mushrooms onto the pizza evenly adding chilli, salt & pepper & a couple blobs of soft cheese to finish

5. place in the oven until the tortilla has gone slightly crispy.

Serve with a fresh salad.
